Deep garnet
with youthful rim

Hand harvested and cooled overnight before destemming to small stainless steel open-top fermenters. Inoculated with neutral yeast and twice daily plunges carried out during the fermentation. Left on skins for 21 days before pressing to predominantly new French oak barriques. Natural malolactic fermentation in the spring as temperatures warmed. Racked from barrel once during the 18 months. Light filtration.
