Deep garnet
with youthful rim

Hand harvested and cooled overnight before destemming to small stainless steel open-top fermenters. Inoculated with neutral yeast and twice daily plunges carried out during the fermentation. Left on skins for 24 days before pressing to 38% new French oak barriques. Natural malolactic fermentation completed in barrels. Racked from barrel twice during the 18 months. Light filtration.
