Crafted With Care

Hand harvested and cooled overnight before destemming to small stainless steel open-top fermenters. Natural fermentation with twice daily cap wetting. Left on skins for 15 days before pressing to predominantly new French Oak barriques. Natural malolactic fermentation in the spring as temperatures warmed. Racked from barrel once during the 18 months. Light filtration.
