Crafted With Care

Hand harvested and cooled overnight. 20% of fruit was left as whole bunches while the remainder was destemmed into small stainless steel open-top fermenters. Natural fermentation with twice daily cap wetting. Left on skins for 15-20 days before pressing to carefully selected French Oak barriques (40% new). Natural malolactic fermentation in the spring as temperatures warmed. Racked from barrel once during the 18 months. Light filtration.
